Recipe For Noodles With Chipotle

Chipotle noodles are a food that can be enjoyed as a main dish, a side dish, and can also be included in beef tacos. They can even be made into a soup. And, given its star ingredient, chipotle, it is clear that it is a preparation of Mexican cuisine. Certainly, these noodles are one of the favorite dishes of Mexicans.

The first thing we have to know is that ‘chipotle’ is a word that comes from the ancient Nahualt and that comes to mean ‘smoked’. This chili is prepared in the following way: a morita chili is taken, it is left to ripen and then it is smoked and seasoned.

In this process, the chili loses part of its original size, but not its flavor: something that can be evidenced even by its intense smell. It should be noted that, although it is usually prepared from morita pepper, it can also be prepared from jalapeño pepper and other varieties such as: blackberry, serrano and pasilla.

And what is the chili seasoned with? Mainly with fresh herbs: bay leaf, thyme and oregano. What, without a doubt, allows it to achieve its characteristic flavor is the smoking process, which distinguishes it from other types of chili peppers, which are simply left to dry in the wind.

Now, can they be smoked at home? Yes, but this is a long process that is made up of several phases.

Chipotle noodles: a dish with personality

Chipotle noodles are a food that provides several nutrients (vitamins and minerals) necessary to strengthen the immune system, reduce the levels of LDL cholesterol and triglycerides in the blood.

In short, the nutritional contribution is summarized as follows:

  • Minerals (iron, potassium, magnesium)
  • Vitamins (B1, B2, B3, A and C)
  • Proteins (mainly present in noodles). For every 100 grams of noodle we obtain between 12 and 13 grams of protein, approximately.
  • Capsaicin (present in chipotle pepper) which is a substance capable of accelerating metabolism and, therefore, helps burn calories and lose weight.

    The following amounts correspond to a preparation for one or two people. In the event that there are more, it is recommended to increase the amounts proportionally.

    Ingredients

    • 2 cloves of garlic
    • 2 whole chipotles
    • 1 large avocado
    • Aged cheese (to taste)
    • ¼ glass of water (50 ml)
    • 1 small onion
    • 1 package of short noodles (200 g)
    • ¼ glass of chicken broth (50 ml)
    • 1 ¼ cups tomato puree (300 ml)
    • 2 tablespoons of vegetable oil (30 g)
    • Seasonings: salt, pepper, dried oregano
    • Optional: Sour cream (to taste) and fresh parsley

    Preparation

    1. First, chop the tomato, onion and chipotles into small pieces.
    2. Then, blend the chopped ingredients with the chicken broth and half a teaspoon of salt for a couple of minutes. Make sure all the ingredients are well integrated.
    3. Apart, put a little vegetable oil in a pan and let it heat well over medium heat.
    4. Then add a handful of raw noodles and let them brown for about 5 minutes. Stir constantly.
    5. When the noodles are golden brown, add the tomato, onion and chipotle mixture that you prepared to the pan.
    6. Cover with a lid and cook for 15 minutes over low heat.
    7. Then turn off the heat and let the noodles cool at room temperature for 1-2 minutes.
    8. Apart, cut the avocado into small cubes and reserve.
    9. Serve and top with 1-2 tablespoons of sour cream, a handful of aged cheese, and finally a few cubes of avocado. You can also place a sprig of fresh parsley on top of the avocado to flavor and decorate.
    10. Season and enjoy.
