    Preparation

    1. We turn on the oven at 180 ºC

    • 1 ¼ cup granulated sugar (250 g)
    • 2 tablespoons of vegetable margarine (40 g)
    • Water (required amount)

    • 1 teaspoon of ground cinnamon (5 g)

    Preparation

    1. We will start by placing ¼ cup of sugar with the cornstarch in a container and stir very well.
    2. We combine the chickpea flour in half a cup of water. Mix very well and add to the cornstarch with the sugar.
    3. We will mix everything evenly until we achieve a very thick mixture that will make a little foam on top.
    4. In a small pot we will put the soy milk together with the vanilla essence and the lemon peel and we will bring to a boil.
    5. Once very hot, we will add the previous mixture and let everything cook together, stirring the pot at times, to prevent it from sticking or burning.
    6. After five minutes, remove from heat and immediately add the margarine. Stir very well so that the mixture is homogeneous.
    7. In another ¼ cup of water mix a teaspoon of agar agar and add to the entire preparation. Now, keep the mixture ready.
    8. To make the caramel, combine a cup of sugar with a pinch of water in a pot, just covering the sugar in the pot.
    9. When the caramel begins to take color, add 1 glass of hot water (200 ml), little by little.
    10. Cook over medium heat for about 3 minutes or until the caramel turns a transparent, medium-weight brown color.
    11. To finish, place a little of the caramel in a large container or in several placemats and on top, the flan.
    12. Let the flan cool down to room temperature. Once it cools down, store it in the fridge for at least two hours, ready to eat!
